3 Tried and True

A few weeks ago I dumped everything random in my cupboards and fridge into a crock-pot to make some soup on a rainy Saturday. Turned out yummy and we've been eating it once a week for dinner with leftovers for lunches. I love when recipes turn out like that! The recipe below is my favorite combination but I've also added chopped bell peppers just because we had some leftover that were going to go bad.

Spicy Black Bean Soup
Makes 6 servings
Carton of Trader Joe's Latin Style Black Bean Soup
1 can of black beans
1 can of corn
1 can of diced green chiles
1 can of diced tomatoes
1/2 diced onion
Cilantro (optional)
Avocado (optional)


I've cooked it on the stove or in the Crock-pot. Either way just dump all ingredients besides avocado in the pot.

P.S. Do you use Crock-pot liners? I swear they've changed my life! No more scrubbing!

  1. Thanks, Danielle! I love black beans and this seems so easy, too! I need to send you a recipe that I just made for Rachel and Weston that turned out really good. I have never used the liners but it sounds like an excellent idea! Still, people scare me when they talk about the toxins in plastic. Hopefully, it is all safe. I guess your doctor friends could tell you. You seem to have the inside track! :)

    1. Yes, I think you're right! Sean gets weary about a lot of things like that but hasn't said anything about crockpot liners yet so I'm living it up while I can! I'll have to try your yummy soup! I'll make you mine when I come home! xoxo
